Eurocryor, a brand of the Epta Group specialising in the design and manufacture of high-performance, premium refrigerated display cabinets, has completed two exclusive full renovation projects for the traditional Sapori e Profumi butcher shops in Verona and Trevenzuolo. The Cazzola brothers, owners of both stores, chose to collaborate with Epta for the refurbishment of their premises, drawing on the Group's extensive expertise in developing technologically advanced, bespoke solutions designed to integrate seamlessly into a wide range of retail environments while preserving each outlet’s distinctive character. An standout example of this approach is the Trevenzuolo butcher shop – an established destination for meat enthusiasts throughout the Verona area – where Eurocryor's refrigeration solutions preserve not only the quality of the cuts on display, but also the family's artisanal heritage. The Cazzolas have been active in the wholesale pork trade for three generations and today operate a number of high-quality retail locations across the region. This blend of innovation and tradition is clear from the moment customers step into the historic shop, where the glass and steel of the new display cabinets harmonise beautifully with a timeless interior, enhanced by a rare and striking marble floor. Epta’s DYNAMIC AND ADAPTIVE SYSTEMS set a new standard in meat preservationAt the heart of the store is Bistrot, the flagship model of Eurocryor's Stili range, which plays a key role in ensuring exceptional freshness and the authentic flavour of the products displayed, thanks to its dynamic refrigeration system. To address the specific needs of meats and cured products, Epta has patented the Dynamic System, which preserves the intrinsic qualities of food throughout its entire lifecycle – from portioning to the moment it reaches the customer. By minimising fluctuations in temperature and humidity inside the counter and significantly reducing the average 24-hour weight loss of meat, the system ensures an uninterrupted preservation process without unnecessary transfers to cold rooms. This results in a notable reduction in food waste and up to 1.5 hours of labour saved each day for store staff. The counter is also equipped with a windows opening, which combines elegance, transparency and robustness, while allowing products to be displayed on top of the cabinet itself – enhancing customer interaction and encouraging inventive culinary pairings. The horizontal display of cold cuts and ready-to-cook specialities is complemented by vertical solutions, such as Eurocryor’s Stili conservation tower. Connected to the counter and supplied by its own dedicated refrigeration circuit, the tower features the Adaptive System, a technology that adjusts operating parameters and modulates the evaporation temperature based on external conditions, ensuring a tangible reduction in energy consumption. The result is optimised space management and outstanding product visibility, contributing to improved overall profitability. Enhanced merchandising for an UNMATCHED SHOPPING EXPERIENCEThe renovation has completely redefined the store’s merchandising approach: the new layout combines wall-mounted linear displays, a service counter and the refrigerated tower to create an engaging shopping experience that highlights the broad assortment of cuts – the true centrepiece of the shop’s culinary offering. “The collaboration between Epta and Sapori e Profumi has been marked not only by the installation of advanced technologies, but also by a genuine partnership founded on close customer support,” explain the project managers, “From the earliest design stages through to installation, our specialised technicians provided continuous assistance, ensuring that every detail aligned with the project requirements and with the expectations of Mirco, Matteo and Michele Cazzola.” Since the refurbishment, the shop has recorded clear improvements in profitability and margins, positioning itself as a benchmark for butcher shops and gourmet retailers seeking to differentiate themselves in today’s competitive marketplace.
