ENOMACELLERIA CASA AUTOCTONO CHOOSES EPTA TO PRESERVE ITS TUSCAN FLAVOURS

Massimiliano Silano, Tommaso Pierattini and Lapo Sartilani, founders of Casa Autoctono have relied on Epta to implement the important project of opening an experiential butcher shop which, in addition to becoming a centre of emotion and conviviality, reflects the unique flavours of Tuscany.

 

This has resulted in enomacelleria Casa Autoctono situated on the Florentine hills of Settignano, which offers Tuscan meat lovers a hybrid format, able to combine the traditional sale at the counter with in-store tasting and consumption. The premises seats 25 and it is possible to enjoy new recipes every day, based on cuts of certified origin, accompanied by a high selection of human wines, rigorously branded Autoctono. This is a category of wine which focuses on the relationship between man, territory and production process, enhancing craftsmanship, authenticity and respect for nature.

​An all-round quality which in the meat is ensured by a controlled supply chain and by free-range breeding techniques, without antibiotics and respectful of the animal, joined by extremely high performing refrigeration, designed to maintain the properties of the foods and adapt to every product category.

 

EPTA'S CUTTING-EDGE SOLUTONS AT HOME AT AUTOCTONO

Casa Autoctono is home to the cutting-edge Epta refrigeration solutions, selected according to the high performance standards and exhibition requirements of the shop, characterised by reduced sales areas.

Proving its role as Fully Integrated Provider once again, Epta has completed a turnkey project, from the consulting service provided by EptaTechnica, to the installation, and to the after-sales assistance of the entire refrigeration system, consisting of a transcritical CO2 modular power pack, connected to the serve-over cabinet and the exhibition towers branded Eurocryor, a cold room for the preservation of half-carcasses and the vertical open Pencil of the Collage range of Bonnet Névé.

The display of the vast gastronomical offer of the shop is articulated in three technological solutions: the linear Eurocryor cabinet with Dynamic System designed to preserve the characteristics of Fassona meat certified COALVI, of beef, pork and poultry, while minimizing food waste. The preservation towers not only offer a scenic display of ready to cook dishes and cheeses, but are equipped with Adaptive System to adjust the operating parameters based on the external conditions. Finally, the plug-in branded Bonnet Névé, in the open version, enhances beverages, jams and fresh cheeses under the banner of maximum visibility and accessibility, for an extra touch of taste and convenience.
